Speck is a smoked Prosciutto, a Regional Specialty that comes from the “Alto Adige”, area situated in the north east of Italy and is heavily influenced by its German neighbours.

 

The process of making speck first begins with curing the legs of pork in salt and various spice combinations which may include juniper, bay leaves, cinnamon, nutmeg and coriander for up to 4 months. After this the smoking process begins and takes about 4 days, that allows for the inner layers of meat to be really penetrated with the flavours of the wood – commonly juniper and pine woods.

 

For an original twist, try it on pasta sauces, antipasto platters, pizza, paninis… even soups

 

Jamon Serrano literally means “Mountain Ham” and is a dry-cured Spanish Ham.
